Your instructor is Carl Blake.  He began the pastured pig movement in 2007. He recreated a breed of pig from 1821 Germany called the Swabian Hall.  He went on to win many contests and beat the Iberia of Spain in taste contests. He also beat the Puro Allentejano from Portugal. Winning he New York Charcuterie Masters was a huge hit.
